Is Eternal Suffering in Hell really what the New Testament teaches? Why is it so popular today? What evidence is there for eternal suffering, and what about the verses that contradict that view?

What are your thoughts on Lazarus and the rich man in Luke 16?

First, there's no reason to think that this is anything more than a parable, which is how it is described to us in the Gospel passage.

However, even if it were meant to teach us something, it's probably about "Abraham's Bosom" which was a temporary holding place for the righteous, pre-Christ.

This is where Jesus went to "preach to the souls in sheol [incorrectly translated as "hell" in most English Bibles] that he had come and fulfilled the Messianic promise.

Most scholars today do not believe there is anyone in "Abraham's Bosom" now that Christ has led captive those held there awaiting His resurrection.

In other words, what we read about in the parable of Lazarus and the Rich Man is not intended to be the final, eternal resting place of anyone, but a temporary holding place for those pre-Judgement Seat of Christ.
